Substituting an address

Hi. I have an email contact form on my website. There is a textbox, for the person filling out the form, for there email address. When it is sent, the from email address is the server where the site is hosted. Is there a way to take the sendees email address and include it the, or substitute it, with the servers email address, so that it can be captured by an email client. Thanks.
