How about a Guestbook script that uses a text file to store data. You can just copy a new set of it into any folder and start a new one for different users:

I see hotscripts as the best place to start as well. It's the whole personal guestbook idea. There are plenty of site specific, but I can't recall one that allows each user to have his/her own guest book. Great idea though. Perhaps I build it in the near future.
